Marzipan!

Marzipan are Almond based icing that can be eaten plain or used in covering cakes and also used as sweet treats for desserts or teas. Have got a recipe to share with you and some images to show to you.

I will start with the ingreident and method of making Marzipan.

Ingredients
350g - Ground Almond
175g - icing sugar and extra for dusting
175 - caster sugar
3 - large eggs, one of them separated
½ - tsp pure Almond extract
1 - tsp lemon juice
1 - tsp brandy

Method
Begin by sifting the icing and caster sugar into a large bowl, then stir in the whole eggs and the egg yolk. Place the bowl over a pan of barely simmering water and whisk for about 12 minutes until the mixture is thick and fluffy. Then remove the bowl from the heat and sit the base in a couple of inches of cold water. Whisk in the almond extract, lemon juice and brandy and continue to whisk until the mixture is cool. At this point stir in the ground almonds and knead to form a firm paste.

That's what Marzipan looks like and you always have to roll it before covering your fruit cake.

Like i said  you can also have Marzipan for Teas or Treats.

Marzipan can also be used for sugar flowers and  sugar modeling too!

We have lots of thing we can make with Almonds. Most especially things to do with Gluten -Free desserts. That's something we will have to talk about another day.

Stay blessed and happy Sunday!
