Float like butterfly and sting like a bee!

That’s what Muhammad Ali said but I say; looks like a cake, take a slice and eat it, lol! Making our special carrot cake with white chocolate cream cheese filling.

It tasted so nice and the celebrant was so happy from the first look he had of his cake to the last bite!

Cream and Gold.

My lovely friend sent me eight different cakes and wanted me to incorporate all the designs into one cake. Not only that, she also wanted the cake simple and elegant.
When i finished "The Cake". I wasn't too sure it was nice, until my cousin made a comment about the cake, cool and nice he said!

Then i instagrammed the cake and i got lovely response about the cake. Her brother picked the cake up for me because i was going out of town. He saw the cake and was impressed, i guess!


Then i got an email with the longest thank you note. The cake was such a hit that orders kept coming in (Cake decorators have no life). My weekend away was a waste because i kept on replying to emails about cake orders (not that i am complaining). Back to the story. She was very pleased and i was pleased that she was pleased too!

Bush Stroke Cakes are in now!

Made two messy Brush Stroke Cakes last week. I don't know why i am always thinking, i am the blog , when i am on instagram! Maybe its because instagram is easier just paste and people will like it, job done!

The one everyone likes!

Made a three layered cake. Chocolate Marble layer, Strawberry layer and Vanilla sponge layer. Filled them with Vanilla Butter cream and Dark Chocolate Ganache.
The cake was the right height and right size for a friend's birthday cake and a cake for another friend's best friend's birthday. They both ordered last minute, at the same time and choose the same design but different colours  but they felt similar to me. Finishing the cakes with a big edible flower on top of each cake.

Wafer Paper Flowers on cakes and .......

Hello and hope you all have heard about Wafer Paper Flowers. I am going to shorting it to WPF, because it’s too long to keep  on typing but back to the main topic.
WPF has taken the cake decorating industry by storm this year thanks to the fabulously creative and contemporary floral designs by Stevi Auble at Hey There Cake in San Diego. Stevi’s work has inspired decorators the world over.


While most of the stand-out designs to date with wafer paper flowers have been contemporary in style, wafer paper flowers work beautifully with vintage style cakes also to create a soft, blousy style flower, with two gorgeous examples

Below, there  is a design with a strong vintage influence blending soft wafer paper roses with 2-D handpainted floral appliques for an exquisite multi-dimensional cake design. And on the right, some fantastically realistic wafer paper flower.



Wafer paper is probably the best medium for making edible flowers allowing you to capture the wafer thin effect of this cupped flower just perfectly.  A beautiful white ranunculus flower features in the pretty white cake.

But do i really like the Wafer Paper Flowers? Still debating on that! maybe its because i have been used to Gum Paste and i really find the WPF finicky. Will left you know as time  goes on but if you love it, keep on doing what makes cake decorating easier for you.

Easter and Chocolate.

Hello people,
                      Happy Easter. I am so sorry that I haven't been posting for a while. I started using Instagram and thought that was me posting.

Well, Easter is here and I hope you all have bought your Easter eggs because I went all out buying Easter eggs for myself and I am not a chocolate fan. We are so busy at the bakery, baking cookies at Estherfairs. I can't believe I actually have time to say hello and tell you all to put in your last minuite order for Simnel cakes, Cupcakes and Cookies.

You can also pick up hand made cookies from The Frangipani Cafe @  96 Knights Hill, West Norwood, starting from Wednesday the 1st of April. Like I said, we are so busy baking.

The finished product.

The jars were filled with all the cake layers and fillings I mention in the previous post. The jars were put on the shelf for about 20 minuites and they were sold out. We had to make some more jars and there were sold out too! Thank you to all our lovely customers at The Frangipani Cafe, with love from Estherfairscakes.

Yesterday I showed you the demo but this is how the finished product looks like.

Valantine's day indulgence.

Hello lovers, admirers and we lovely singles out there. I am making a dessert for everyone. Its an indulgent dessert  in a jar layered with Vanilla, Strawberry and chocolate cake and has got White chocolate cream cheese, Dark chocolate ganache and Raspberry coolie. layered in between the cake layers. It is a very rich dessert and it can be shared with a friend, lover or eaten by yourself.

It can be picked up at The Frangipani Café  at 96 Knights hill, West Norwood for the price of £ or you can have it in doors with a cup of coffee or tea. At the Frangipani Café, we also have cold drinks  and a special spiced mixed berry ice tea.

It was actually a Christmas special and it stock around because we have lovely customers that have good taste.

It was my birthday and i decided to go all out. Went out for two different dinners. One with my friends and one with my family. It was so special and i was so excited. Let me describe the cake layers and filling to those of you that couldn't make it to any of  the dinner parties!

The cake i took for dinner with my lovely friends. The cake had layers of Chocolate and Vanilla. There were two layers of each and three fillings. The fillings were White chocolate cheese filling, Raspberry mousse and Dark chocolate ganache. Don't be fooled by the height of the cake. The cake was high and that is why, cake decorators always tell you never to judge a cake by looking at a picture!

The cake i took to dinner with my family was very basic because every one i invited had allergy to nuts and i wasn't going to stress over that! We had Vanilla and Chocolate Marble with Dark chocolate ganache filling for both tiers. We had so much cake left over that we gave cakes to staff and some of the customers sitting beside our tables. We had fun and game after dinner and it was just a perfect night to a perfect day for me. My Birthday was Awesome!

Wedding Cake Knives and Servers.

I started getting into cake knives and servers all of a sudden. Why? Only God can answer that!
Here we go into the history of  Wedding a CaKe Knives and Servers.


Apparently the cutting of the wedding cake symbolizes the union of the bride and groom.
The actual act of cutting the wedding cake together shows that the Bride and Groom are willing to work together in their married life.
After the cake is cut a slice of cake is pulled out from the rest of the cake by the matching wedding cake server where the bride will feed it to the groom and then the groom will do the same this, which symbolizes their commitment.
The bride then cuts the cake and serves all of her guests.  This is also a part of the tradition which symbolizes the love that you have for your friends and family.  It is also a way to say thank you to them for attending your wedding.
The wedding knife set will also bring some joy and anticipation to your guests when they go by the wedding cake as they know what you have planned and that they will be a  part of it to.
So if you don’t have a wedding knife and cake set, you will miss all these traditions and not to mention the fun and excitement that it will provide. 
For many people this is a very special part of the wedding celebrations and for others it is just a fun part of the wedding. 
Either way, it can’t be done without this very small and important serving utensil. But why not? If you can afford to get it.

Cake for a Friend.

He is into his beard and was thinking of what to make him. So, i came up with a concept  and i was also trying to keep the concept simple.

 
I was happy because he loved it!

Baby Dedication ...

Yes, we are having Baby Dedication at Hillsong Bermondsey tomorrow and i decided to make the family' dedicating their babies a cake to celebrate the day.

THE HISTORY OF WEDDING CAKES

Saw an article and i just had to share it with you all. The earliest recipe recorded from Britain for a dish for a wedding was in fact a fruit pie. These were piled on top of one another to create a pyramid centrepiece. Queen Victoria was the first queen to use the wedding cake as a focal point at her wedding reception and it was Queen Victoria we can thank for the bridal tradition of wearing white. Before her marriage to Prince Albert on February 11th 1840, the traditional royal wedding dress was silver. Her white wedding dress, trimmed with white Honiton lace was a first for the fashion world, so was her matching white, very elaborate wedding cake.

Her cake was adorned with cupids, signifying love and dogs, signifying faithful attraction. This masterpiece weighed 300 lbs., was 9' in circumference and was 7' high. At that time, there was no refrigeration, so to preserve cakes in order to accommodate the weeks of elaborate art work in sugar adorning the cake, fruit was saturated in alcohol, whisky, brandy or sherry, (or a little of each) baked. After the cake was baked, the alcohol mix was then brushed repeatedly over the surface of the cake to preserve it and to flavour it. Fruitcakes, like fine wines, mature with age so a long shelf life was recommended.


Probably one of the most ostentatious wedding cakes of the Victorian era was that of Queen Victoria's daughter Princess Louise, on her marriage to the Marquis of Lorne in 1871. The Royal Family of the time was opposed to the marriage, but Queen Victoria approved and the couple married in lavish style. The wedding cake stood 5 feet tall from its base to the top tier and weighed over 225 pounds and, of course, it was finished in fine white royal icing. The first genuinely public Royal marriage ceremony was that of Princess Elizabeth (Queen Elizabeth II) to the Duke of Edinburgh. This was the first televised Royal wedding and the first ever occasion that television cameras had been allowed to film from inside Westminster Abbey.


Following the marriage and the day's events guests were invited to an opulent supper. The Royal couple had a total of nine wedding cakes at their reception, with the official cake standing 9 feet tall and weighing in at a staggering 500 pounds. Their official cake had four tiers, three of them replicating in sugar Buckingham Palace, Windsor Castle and Balmoral Castle.


Fruitcake is still the traditional cake of preference in England, Canada, Australia and Southern Africa. Traditionally the frosting used to elaborately adorn these fruitcakes was named royal Icing, made from powdered sugar and egg whites. (In 1840 the sugar was laboriously and finely ground using a pestle and mortar.) Royal icing dries extremely hard to support the layers place on top of each other. Columns separating the cakes were disguised pieces of broom handle covered in royal Icing to match the cake icing covering the cake. Because the royal icing was so hard, a decorative silver hammer placed on the cake table and was used to break the royal icing, which was peeled from the cake before the cake could be cut. Some 100 years later a new ingredient invention called glycerine was introduced into royal icing. which rendered it softer and prevented the royal icing from becoming hard and brittle. The traditional silver hammer was then replaced with a long serrated cake knife or a royal sword was used to make the traditional and symbolic first cut into the cake.


Queen Elizabeth's wedding cakeIn the 1960’s, an Australian baker created a mixture of powdered sugar, glycerine, liquid
glucose, gelatine and a small amount of vegetable fat. This mixture was dough like in appearance and texture and could be rolled out like pastry. This immediately took cake decorating by a storm and became the new fashionable frosting, for covering cakes. Known today as plastic icing (Australian name) sugar paste (English name) and rolled fondant, (American name). The new dough was rolled out and placed over the cake completely enrobing it, and therefore, alleviating the need for covering a cake in royal icing. This new product quickly spread to England and its colonies, and today, is the most popular method of decorating special occasion and celebration cakes.
Rolled fondant was introduced to the American market approximately 30 years ago.

 However, it has only become popular over the last decade with exposure from cake challenges on the television networks. The nature and texture of rolled fondant has opened the doors to much creativity and artistry. Today wedding cakes are both traditional and contemporary and are often seen not only in the traditional white and ivory, but also contemporary in style. Wedding cake are now displayed in a multitude of colours, shapes and sizes, with an eclectic array of edible bows, flowers, drapes, polka dots and stripes, swirls and curly-cues and designs to fit any theme imaginable.

I have missed you all like crazy. I needed to get away for a  while but i am back now and ready to answer all your questions. I never post your response online because i fell people's privacy should still be respected. Thanks to all the well wishers and those who were checking if i had a new post or  have updated the blog page. I can't begin to tell you how important you all are to me.

Lest i forget, i was approached to be a Head chef for a new company in London. Still thinking about that and i also want to work with some lovely friends. I was going to spill the title of the company (The name gives it away). Its still on the down low, so "MUM's" the word!

Good week and a fantastic weekend.

Morning all, hope you had a good week or should I say fantastic weekend, like I did. My little ones were all in town together, saw one of my special mum, made her pork casserole, made some cakes. Celebrated with a dear friend. My sisters are in town. Amazing speaker spoke on Sunday. Jesus loves me and lives in me. I am telling you, my week was fantastic and I know God will upstage this week better than last week, for all of us in Jesus name. Thank you Jesus.

Made some simple cakes. I realized that I might like Chocolate Ganache! I have always made Chocolate Ganache but because I am not a chocolate lover. I taste a drop of it when I make it. Last week, I made a lovely chocolate cake with a thick rich chocolate ganache and let it sit for about an hour. Had a slice of the trimmings and I went back for seconds. I shouldn't lie, I shock myself and told everyone who knows, I hated the taste of chocolate but I guess I need to keep renewing my mind about  all things.

Baby Dedication.

Our First Baby Dedication at Hillsong SE. I am so excited about tomorrow. Babies are going to be dedicated and we all get to rejoice with the parents.  God is so fantastic and He keeps me wanting more of Him. Well decided to make a cake for the baby dedication and share with the church and for the families to take pictures with the cake. How that is going to be done, i am leaving it to the lady in charge of that department. My job is to make the cake and deliver the cake in perfect condition.

I went for a simple three tier cake. Hope everyone loves it!
