It's Christmas Time!

The smell of the toasted nuts, Christmas lights on the street. Everyone being jolly, sharing their love and joy around. Christmas carol and the smell of cinnamon, mix spice and nut meg. Drinking eggnog and trying to get someone under the mistletoe. It just doesn't get any better than this! I love been around my family during Christmas.

I know the traditional cake for the season is Fruit cake but i don't like Fruit cake at all! Will share a recipe with you and if i had my way.  I will change what Christmas cake is! If you have any information on who i can call to make that happen please let me know, lol!

Ingredients
450g Self-raising flour
125g Caster sugar
1 tsp Baking powder
1 tsp Mixed spice
Pinch salt
125g Unsalted butter
450g Mixed fruit and peel
1 tsp Bicarbonate of soda
250ml Milk

Method
1, Preheat the oven to gas mark  Gas 2, 150C . Grease and line a baking pan of your choice.
Tip
Greasing and lining cake tins
2, In a bowl sift together the flour, sugar, baking powder, mixed spice and salt. Rub in the butter and then fold in the mixed fruit.
3, Stir the bicarbonate of soda into the milk then add to the mix and stir until well combined.
4, Spoon the mixture into the baking pan.


5, Place in the oven for 1hr 45 minutes. Keep an eye on the cake and cover it with a sheet of foil if it’s getting too dark.
6, Allow to cool a little and turn out or can also be designed.
