Peanut and Oatmeal cookie recipe

Morning all, like i promised. The Peanut and Oatmeal cookie recipe will be posted today.

Oat meal - 55g
flour - 115g
Egg - 1 Large
Butter - 115g
Soft Dark Brown Sugar - 115g
Peanuts - 55g


1 Turn oven to 180oc/ Gas mark 4. Get your cookie tray and line it with parchment paper.
2 Get a deep mixing bowl, wooden spoon, scale and a fork. 
3 Weigh the butter and sugar into the bowl and mix. just enough for the butter to get soft.
4 Add the flour, oatmeal and peanuts into the mix. Combine the mix together.
5 Break the egg in and mix well using the fork. Cover and leave for 4min in the fridge to rest.

The whole mixing process shouldn't take more than 5min. Get the cookie mix out of the fridge and start to portion. All you need for portioning are two teaspoons because the mix spreads out. All you  need to do, is to scoop a little amount of the mix on one tea spoon and scrape it on the tray with the other tea spoon.

Spread  evenly and put in the oven for 10 to 15mins. When cookies are ready. Get the tray out and let it sit for a minute before transferring them on to the cooling rack.


Chocolate chips - 50g
Butter -25g 
Peanut butter - 1tbsp.

Melt chocolate chips and butter together in the microwave for 30secs. When melted, add the peanut butter into the chocolate mix. Making sure its well mixed and that's your sauce done. All you have to do is drizzle the sauce over the cookies or you can dunk half of the cookie into the sauce and leave on a parchment paper for a minute or two.
